Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry with paper towels to ensure they crisp up nicely. Season both sides generously with salt and pepper to enhance the flavor.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken skin-side down and cook for 5 to 7 minutes until the skin is golden and crispy. Flip the chicken and cook the other side briefly. Remove the chicken from the skillet and set aside to rest while you prepare the sauce.
  3. Make the Lemon Garlic Sauce: Reduce the heat to medium. Add the minced garlic to the pan and sauté for about 30 seconds until fragrant. Pour in the fresh lemon juice, vegetarian Worcestershire sauce (natural), and grape juice, scraping up any browned bits from the bottom of the pan. Stir in the fresh rosemary and bring the mixture to a gentle simmer.
  4. Combine and Simmer: Return the chicken to the skillet, skin-side up. Cover the pan and let everything simmer gently for 10 to 12 minutes, allowing the flavors to meld and the chicken to finish cooking through.
  5. Serve: Once the chicken is tender and the sauce has slightly reduced, taste and adjust seasoning if needed. Optionally, sprinkle some grated plant-based dairy/cheese (plant-based) over the top for a creamy finish before serving.
