Ingredients

Scale

Salad Ingredients

  • 4 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced into thin rounds
  • 6 slices smoked turkey bacon
  • 1/2 cup plant-based cheese, cubed or crumbled
  • 1/4 cup red onion, finely sliced
  • 2 tablespoons fresh herbs (parsley or basil), chopped
  • Salt, to taste
  • Pepper, to taste

Dressing Ingredients

  • 2 tablespoons apple cider vinegar (natural)
  • 3 tablespoons extra virgin olive oil (natural)

Instructions

  1. Prepare the Vegetables: Rinse the baby spinach thoroughly and spin dry. Slice the cucumber into thin rounds, halve the cherry tomatoes, and finely slice the red onion. Set aside for assembling the salad.
  2. Cook the Smoked Turkey Bacon: Heat a skillet over medium heat and cook the smoked turkey bacon until crispy, about 4-5 minutes per side. Place cooked bacon on paper towels to absorb excess oil, then chop into pieces once cooled.
  3. Assemble the Salad Base: In a large mixing bowl, combine the prepared baby spinach, cherry tomatoes, cucumber slices, and red onion. Toss gently to mix evenly.
  4. Add Cheese and Bacon: Cube or crumble the plant-based cheese and add it to the salad along with the chopped smoked turkey bacon. Toss lightly to distribute evenly.
  5. Make the Dressing and Toss: In a small bowl, whisk together apple cider vinegar (natural), extra virgin olive oil (natural), salt, and pepper. Drizzle the dressing over the salad and toss gently to coat all ingredients with a light, flavorful dressing.

Notes

  • Use the freshest ingredients for the most vibrant and appealing salad.
  • Refrigerate the salad for 15 minutes before serving to meld flavors and keep it cool.
  • Add dressing gradually to avoid sogginess and maintain the salad’s crunch.
  • Cook smoked turkey bacon until crispy for an excellent texture contrast.
  • Try experimenting with different herbs like cilantro or mint for additional flavor variations.
