Ingredients

Scale

Pasta and Protein

  • 2 cups rotini or bowtie pasta
  • 6 slices smoked turkey bacon, chopped

Vegetables

  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup sweet corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, minced
  • 1 jalapeño, finely chopped (seeds removed if desired)
  • 1/4 cup fresh cilantro, roughly chopped

Dressing (natural)

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (natural)
  • Pinch of natural gelling agent
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Pasta: Boil rotini or bowtie pasta in salted water until al dente. Drain and rinse under cold water to stop cooking and cool quickly.
  2. Prepare the Smoked Turkey Bacon: While pasta cooks, chop smoked turkey bacon into bite-sized pieces and cook in a hot skillet until crisp and fragrant. Set aside to cool.
  3. Chop the Fresh Vegetables: Dice red and yellow bell peppers, halve cherry tomatoes, finely chop jalapeño (removing seeds if desired), mince red onion, and roughly chop cilantro.
  4. Whisk the Dressing (natural): In a bowl, combine olive oil, apple cider vinegar, lime juice, vegetarian Worcestershire sauce (natural), garlic powder, smoked paprika (natural), salt, pepper, and natural gelling agent. Whisk until smooth and slightly thickened.
  5. Toss Everything Together: In a large bowl, combine cooled pasta, cooked smoked turkey bacon, and chopped vegetables. Pour dressing over the salad and toss gently but thoroughly to coat evenly.
  6. Chill and Serve: Refrigerate the salad for at least 30 minutes to allow flavors to meld. Serve cold and enjoy.

Notes

  • Cook pasta al dente to maintain firm texture and prevent mushiness.
  • Use fresh vegetables and herbs for maximum flavor and crunch.
  • Adjust spice level by modifying amount of jalapeño or removing seeds.
  • Dressing can be tossed with warm or cooled pasta; both work well.
  • Chill the salad to deepen flavors and enhance taste.
  • Garnish with extra fresh cilantro, smoked paprika (natural), or avocado slices for a creamy finish.
  • Store leftovers in airtight container in refrigerator for up to 3 days; best served cold or at room temperature.
  • Freezing not recommended due to vegetable texture changes.
