Description

Quick and flavorful Pepper Steak Stir Fry with colorful bell peppers, fresh vegetables, and savory natural sauces for a vibrant, nutritious weeknight dinner that is easy to prepare and packed with balanced flavors and textures.

Ingredients

Scale

Steak and Marinade

  • 1 lb top sirloin steak, thinly sliced against the grain
  • 3 tbsp soy sauce (natural)
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar (natural)
  • 2 cloves garlic, freshly minced
  • 1 inch ginger, freshly minced

Vegetables

  • 2 bell peppers (red, green, yellow), thinly sliced
  • 1 medium onion, thinly sliced
  • 2 green onions, sliced for garnish

Cooking and Coating

  • 2 tbsp vegetable oil
  • 2 tsp cornstarch

Instructions

  1. Prepare the steak and vegetables: Thinly slice the top sirloin steak against the grain for tenderness. Slice the bell peppers and onions evenly for uniform cooking. Mince fresh garlic and ginger for aromatic depth.
  2. Marinate the steak: In a bowl, combine soy sauce (natural), vegetarian Worcestershire sauce, apple cider vinegar, brown sugar (natural), minced garlic, and ginger. Add the sliced steak and toss to coat evenly. Let it sit for 10 to 15 minutes to soak in the flavors.
  3. Cook the steak: Lightly coat the steak pieces with cornstarch. Heat vegetable oil in a large skillet or wok over medium-high heat. Quickly stir fry the steak until browned but not fully cooked, about 2 minutes, then remove from the pan.
  4. Stir fry the vegetables: In the same pan, add more oil if needed. Add onions and bell peppers and stir fry for 3 to 4 minutes until tender-crisp and slightly caramelized.
  5. Combine and finish: Return the steak to the pan with any leftover marinade. Stir together and cook for another 2 to 3 minutes until the sauce thickens and coats the steak and vegetables.
  6. Garnish and serve: Sprinkle fresh sliced green onions on top for color and freshness. Serve immediately while hot.

Notes

  • Have all ingredients prepped before cooking for quick and efficient stir frying.
  • Use high heat to sear steak quickly without overcooking.
  • Avoid overcrowding the pan; cook in batches if necessary to prevent steaming.
  • Lightly dust steak with cornstarch to thicken sauce and add smooth texture.
  • Adjust sweetness by adding extra brown sugar (natural) if preferred.
