Description

Penne Basil Pasta Salad is a vibrant and refreshing dish perfect for summer gatherings. This colorful salad combines al dente penne pasta, fresh basil leaves, smoky turkey bacon, plant-based cheese, cherry tomatoes, cucumber, and red onion, all tossed in a zesty apple cider vinegar dressing. It offers a delightful balance of flavors and textures that make it ideal for picnics, potlucks, or quick lunches.

Ingredients

Scale

Pasta and Vegetables

  • 8 ounces dried penne pasta
  • 1 cup fresh basil leaves, hand-torn
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced

Protein and Cheese

  • 4 slices smoked turkey bacon
  • 3/4 cup plant-based cheese, cubed or shredded

Dressing

  • 1/4 cup apple cider vinegar (natural)
  • 1/3 cup extra virgin olive oil (natural)
  • 1 teaspoon Dijon mustard (natural)
  • 1 clove garlic, minced
  • 1/4 teaspoon natural gelling agent
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the Penne Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook until just al dente, about 10 to 12 minutes. Drain and rinse under cold water to stop cooking and cool the pasta for the salad.
  2. Prepare the Fresh Vegetables and Bacon: While the pasta cooks, crisp the smoked turkey bacon in a nonstick pan until browned and crunchy, then chop into bite-sized pieces. Slice cherry tomatoes in half, peel and slice cucumbers, and thinly slice the red onion. Tear fresh basil leaves by hand to release their vibrant aroma.
  3. Whisk Together the Dressing: In a small bowl, combine apple cider vinegar, extra virgin olive oil, minced garlic, Dijon mustard, salt, pepper, and natural gelling agent. Whisk vigorously until the dressing is well emulsified and bright.
  4. Toss Everything Together: In a large mixing bowl, combine the cooled penne pasta, fresh vegetables, crispy turkey bacon, and cubed plant-based cheese. Pour the dressing evenly over the salad and toss gently but thoroughly to coat every ingredient.
  5. Chill and Serve: Cover the salad and chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature for a fresh summer treat.

Notes

  • Cook pasta al dente to avoid mushiness.
  • Use fresh basil leaves for best aroma and flavor.
  • Chilling the salad helps the dressing infuse fully into the ingredients.
  • Toss the salad gently to keep the cheese and delicate ingredients intact.
  • Adjust dressing seasoning to your taste for perfect balance.
