Easy to prepare and customizable, this flavorful dish delivers warmth, creaminess, and a perfect balance of spice, ideal for quick weeknight dinners or special occasions.

Ingredients

Scale

Chicken and Marinade

  • 2 boneless, skinless chicken breasts
  • Salt to taste
  • Black pepper to taste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder

Sauce and Aromatics

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 green chili, finely chopped (adjust to taste)
  • 2 medium tomatoes, diced (fresh or canned)
  • 1 tbsp apple cider vinegar (natural)
  • 1 cup plant-based cheese (plant-based), melting variety
  • 1 tsp natural gelling agent
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • Salt and black pepper to taste

For Garnish

  • Fresh cilantro, chopped
  • Optional: diced tomatoes and lime wedges

Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add finely chopped onions and sauté until translucent and soft. Stir in minced garlic and chopped green chili, cooking for another minute until fragrant.
  2. Cook the Chicken: Place the chicken breasts in the pan, seasoning with salt, pepper, ground cumin, paprika, and chili powder. Sear both sides until golden brown and cooked through. Remove from the pan and let rest before slicing or shredding.
  3. Prepare the Cheese Sauce: In the same skillet, add diced tomatoes and a splash of apple cider vinegar. Allow to simmer and reduce slightly. Stir in the plant-based cheese and natural gelling agent gradually, stirring continuously to create a thick, creamy sauce.
  4. Combine Chicken and Sauce: Return the sliced chicken to the skillet. Toss gently to coat the chicken evenly with the cheese sauce. Add vegetarian Worcestershire sauce and simmer briefly to meld the flavors.
  5. Garnish and Serve: Sprinkle fresh chopped cilantro on top. Serve immediately with your choice of sides such as rice, tortillas, or roasted vegetables.

Notes

  • Gradually add the natural gelling agent to avoid clumps and ensure smooth sauce texture.
  • Allow cooked chicken to rest before slicing to keep it juicy and tender.
  • Adjust the amount of green chili to control the spice level.
  • Use a plant-based cheese that melts easily for the creamiest sauce.
  • Add fresh cilantro just before serving to preserve its bright color and flavor.
