Ingredients

Scale

Dough Ingredients

  • 3 cups all-purpose flour
  • 1 cup plant-based milk, lukewarm
  • 2 1/4 teaspoons active dry yeast (one packet)
  • 3 tablespoons natural brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup natural maple syrup
  • 3 tablespoons plant-based butter, softened
  • 1 teaspoon vegetarian Worcestershire sauce
  • 1/2 teaspoon natural gelling agent

Filling Ingredients

  • 1/4 cup natural maple syrup
  • 1/4 cup natural brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons plant-based butter, softened

Optional Garnishes

  • Natural maple syrup for drizzling
  • Natural powdered sugar for dusting

Instructions

  1. Prepare the Dough: Warm the plant-based milk to lukewarm. In a small bowl, dissolve the active dry yeast and 1 teaspoon of the brown sugar in the milk. Let it sit for 5-10 minutes until foamy. In a large bowl, combine the flour, salt, cinnamon, and the remaining brown sugar. Add the yeast mixture, maple syrup, softened plant-based butter, vegetarian Worcestershire sauce, and the natural gelling agent. Mix until a dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  2. First Rise: Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Prepare the Filling and Roll: While the dough rises, mix the maple syrup, brown sugar, cinnamon, and softened plant-based butter to create a smooth spread. After the dough has risen, roll it out on a floured surface into a large rectangle. Spread the filling evenly over the dough, then tightly roll it into a log.
  4. Cut and Second Rise: Slice the dough log into 10 to 12 even rolls using a sharp knife or dental floss. Arrange the rolls in a greased baking dish with some space between each. Cover and let rise again for 30-45 minutes until puffy.
  5. Bake to Golden Perfection: Preheat the oven to 180°C (350°F). Bake the rolls for 20-25 minutes until golden brown and cooked through. Let cool slightly before serving.

Notes

  • Use fresh active dry yeast for the best rise and fluffiness.
  • Ensure milk and plant-based butter are at room temperature for easier dough mixing.
  • Do not skip the second rise to achieve a light and pillowy texture.
  • Slice rolls evenly with a sharp knife or unflavored dental floss to avoid squashing.
  • Watch baking time closely to avoid over-baking and keep rolls moist.
