This quick and easy recipe is perfect for a light lunch, picnic, or casual dinner filled with zesty, herbaceous flavors and balanced nutrition.

Ingredients

Scale

For the Marinade

  • 2 chicken breasts, boneless and skinless
  • 1/4 cup fresh lemon juice (natural)
  • 2 garlic cloves, minced
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 3 tbsp olive oil
  • Salt and pepper, to taste

For the Tzatziki-style Sauce

  • 1/2 cup plant-based dairy yogurt
  • 1/4 cup cucumber, finely chopped
  • 1 tsp lemon zest (natural)
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill or parsley, chopped

For Assembly and Garnish

  • 4 soft pita bread pockets
  • 1/2 cup tomatoes, sliced
  • 1/2 cup cucumber, sliced
  • Extra lemon zest (natural) and lemon wedges
  • Fresh herbs such as parsley or oregano for garnish

Instructions

  1. Prepare the Marinade: In a bowl, whisk together fresh lemon juice, minced garlic, chopped oregano and parsley, vegetarian Worcestershire sauce, olive oil, salt, and pepper until well blended, creating a tangy and herbaceous marinade.
  2. Marinate the Chicken: Place chicken breasts in a shallow dish or zip-top bag. Pour the marinade over the chicken ensuring each piece is fully coated. Refrigerate for at least 30 minutes, up to 2 hours, allowing the flavors to infuse and tenderize the chicken.
  3. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for 5-6 minutes per side until fully cooked and charred on the edges. Remove and let rest for a few minutes before slicing into strips.
  4. Prepare the Tzatziki-style Sauce: In a bowl, combine plant-based dairy yogurt, finely chopped cucumber, lemon zest, minced garlic, olive oil, and fresh dill or parsley. Stir well until creamy and evenly mixed.
  5. Assemble the Pitas: Warm pita breads gently to make them pliable. Spread a generous spoonful of the creamy sauce on each pita, layer with sliced chicken breast, then top with fresh tomatoes and cucumber slices. Garnish with extra herbs and lemon wedges for added color and flavor.

Notes

  • Allow the chicken to marinate for the full two hours if possible to deepen citrus flavors.
  • Pat chicken dry before cooking to enhance browning and prevent steaming.
  • Use freshly squeezed lemon juice and zest for the best flavor impact.
  • Warm pita gently in a dry pan or wrapped in foil to achieve a soft texture.
  • Keep the yogurt cucumber sauce chilled until serving for a refreshing contrast.
