Ingredients
Scale
Pasta and Vegetables
- 8 ounces pasta (penne, spaghetti, or fettuccine)
- 1 bunch fresh asparagus, trimmed and cut into 1 to 2-inch pieces
Sauce and Flavorings
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice (natural)
- 1 teaspoon lemon zest (natural)
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Freshly cracked black pepper, to taste
Finish and Garnishes
- 2 tablespoons fresh basil or parsley, chopped
- 2 tablespoons plant-based dairy or cheese alternative (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water before draining the pasta.
- Prepare the asparagus: While pasta cooks, wash and trim the asparagus, then cut into 1 to 2-inch pieces. Heat olive oil in a large skillet over medium heat and sauté the asparagus until vibrant and tender-crisp, about 3 to 4 minutes.
- Build the sauce: Add minced garlic to the skillet with asparagus and cook for 1 minute until fragrant. Stir in fresh lemon juice, lemon zest, and vegetarian Worcestershire sauce, mixing well to combine the bright flavors.
- Combine pasta and sauce: Transfer the drained pasta to the skillet with the asparagus and lemon sauce. Toss together, gradually adding reserved pasta water to create a silky, glossy coating on the pasta.
- Finish with herbs and seasoning: Season with salt and freshly cracked black pepper to taste. Fold in chopped fresh herbs and, if using, sprinkle plant-based dairy or cheese alternative for extra creaminess. Serve warm and enjoy.
Notes
- Use fresh lemons for brighter, more authentic flavor than bottled juice.
- Reserve pasta water to help bind the sauce and add moisture without diluting flavor.
- Do not overcook asparagus; keep it tender but crisp to retain fresh bite and vibrant color.
- Adjust acidity by adding lemon juice gradually according to your taste preference.
- Choose a quality extra virgin olive oil for enhanced flavor and mouthfeel.
