Ingredients
Scale
Pasta and Protein
- 250g cheese tortellini (plant-based), fresh or store-bought
- 150g smoked turkey, chopped into bite-sized pieces
Vegetables and Herbs
- 1 medium cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1 medium red bell pepper, diced
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil leaves, roughly chopped
Dressing
- 3 tbsp olive oil (natural)
- 2 tbsp apple cider vinegar (natural)
- 1 tsp Dijon mustard (natural)
- 1/2 tsp garlic powder (natural)
- Pinch of sea salt
- Freshly cracked black pepper, to taste
- 1/4 tsp natural gelling agent
Instructions
- Cook the Tortellini: Boil the cheese tortellini according to package instructions until tender but firm. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely to maintain texture.
- Prepare the Fresh Ingredients: While tortellini cools, chop smoked turkey into bite-sized pieces. Slice cucumber, halve cherry tomatoes, dice red bell pepper, and roughly chop fresh basil. Combine all these in a large mixing bowl.
- Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, garlic powder, a pinch of salt, black pepper, and the natural gelling agent until the mixture is smooth and slightly thickened.
- Combine and Toss: Add the cooled tortellini and smoked turkey to the vegetables in the bowl. Pour the dressing evenly over the salad and gently toss to coat all ingredients without crushing the tortellini.
- Chill and Serve: Refrigerate the salad for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature, garnished with additional fresh basil leaves, cracked black pepper, or slivers of black olives if desired.
Notes
- Cook pasta al dente to keep tortellini firm when tossed with other ingredients.
- Cool pasta completely before mixing to prevent wilting of fresh vegetables.
- Use fresh herbs to enhance aroma and flavor.
- Adjust olive oil and vinegar ratios in the dressing to suit personal taste preferences for acidity and richness.
- Prepare salad a few hours ahead to deepen flavor.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Freezing is not recommended as it can affect texture.
- Serve salad cold or at room temperature; allow to sit out briefly before serving if preferred.
