  • 1 medium red bell pepper, diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh basil leaves, roughly chopped

Natural Dressing

  • 4 tablespoons olive oil
  • 2 tablespoons apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 garlic clove, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the Pasta: Boil the rotini pasta in salted water until al dente. Drain and rinse under cold water to stop cooking and cool for the salad.
  2. Prepare the Veggies and Protein: Slice smoked turkey into bite-sized pieces. Halve the cherry tomatoes, thinly slice the red onion, dice the red bell pepper. Chop the basil leaves roughly and pit the Kalamata olives if needed.
  3. Make the Natural Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, vegetarian Worcestershire sauce (natural), minced garlic, salt, and freshly ground black pepper until well combined.
  4. Toss Everything Together: In a large bowl, combine cooled pasta, turkey pieces, plant-based cheese cubes, and all the prepared vegetables. Drizzle with the dressing and toss gently but thoroughly to coat.
