Description

Instant Pot Egg Bites are a quick, protein-packed breakfast option combining fluffy eggs, smoky turkey bacon, and melty plant-based cheese, cooked effortlessly to deliver a silky, soft, and moist texture. Perfect for busy mornings or meal prep, these egg bites can be customized with various veggies and plant-based cheeses for a delicious and nutritious start to your day.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/4 cup vegetable broth
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon natural gelling agent

Fillings

  • 1/2 cup smoked turkey bacon, chopped into bite-sized pieces
  • 1/2 cup shredded plant-based cheese

Other

  • Cooking spray

Instructions

  1. Prepare the Egg Mixture: In a medium bowl, whisk together the large eggs, vegetable broth, vegetarian Worcestershire sauce (natural), onion powder, salt, and black pepper until smooth and well combined. Stir in the natural gelling agent to ensure the perfect consistency.
  2. Add Ingredients: Fold the chopped smoked turkey bacon and shredded plant-based cheese gently into the egg mixture. Mix evenly but avoid overmixing to keep the texture light.
  3. Fill the Molds: Spray silicone or metal egg bite molds generously with cooking spray. Pour the mixture carefully into each mold, filling about 3/4 full to allow space for rising.
  4. Set Up the Instant Pot: Pour 1 cup of water into the Instant Pot and place the trivet inside. Set the filled molds on the trivet, ensuring they are steady and not touching the water.
  5. Cook the Egg Bites: Seal the Instant Pot lid, turn the valve to sealing, and cook on high pressure for 10 minutes. Once cooking is complete, perform a natural pressure release for 10 minutes before carefully opening the lid.
  6. Cool and Remove: Allow the egg bites to cool slightly before gently removing them from the molds to maintain their shape and tenderness.

Notes

  • Use silicone molds for easier removal without damaging the shape.
  • Do not overfill molds; leave space for expansion during cooking.
  • Natural pressure release prevents rubbery texture and ensures gentle cooking.
  • Using room temperature eggs helps cook evenly.
  • Keep mix-ins small and uniformly chopped for even cooking.
