Ingredients

Scale

Main Ingredients

  • 4 ears fresh corn on the cob
  • 1 cup diced red bell peppers
  • 1 cup halved cherry tomatoes
  • 3 green onions, finely chopped
  • 1/2 cup chopped fresh cilantro or parsley
  • 1 small jalapeño, minced (optional)

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Optional Variations

  • 1 avocado, diced
  • 1 cup cooked black beans or chickpeas
  • 1/2 cup roasted sweet potatoes, diced
  • Fresh basil leaves (instead of cilantro or parsley)
  • 1 tablespoon grape juice (natural) (to replace apple cider vinegar)

Instructions

  1. Prepare and Grill the Corn: Preheat your grill to medium-high heat. Husk the corn completely, removing all silk strands. Lightly brush each ear with olive oil. Place the corn directly on the grill and cook for 10-12 minutes, turning occasionally, until charred spots appear and kernels are tender. Allow the corn to cool slightly, then carefully cut kernels off the cob.
  2. Chop the Vegetables: While the corn cools, dice the red bell peppers, halve the cherry tomatoes, finely chop the green onions, and mince the jalapeño if using. Chop the fresh cilantro or parsley finely to prepare for mixing.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), sea salt, and black pepper until the mixture is well emulsified and smooth.
  4. Combine All Ingredients: In a large mixing bowl, add the grilled corn kernels, chopped vegetables, and herbs. Pour the dressing over the salad and toss gently to combine. Adjust seasoning with extra salt or pepper if needed. Let the salad rest for a few minutes to allow flavors to meld before serving.

Notes

  • Use the freshest corn available for the sweetest and juiciest salad.
  • Grill marks add smoky depth, so be sure to grill the corn properly.
  • You can prepare the corn and chop veggies ahead of time and assemble the salad later for convenience.
  • Taste the dressing and adjust acidity or seasoning according to your preference.
  • This salad is delicious served chilled or at room temperature.
