Instructions
- Cook the potatoes: Wash and quarter the Yukon Gold potatoes into even sizes. Boil them in salted water for about 10-15 minutes until just tender but still firm. Drain and set aside.
- Prepare the smoked turkey bacon: While the potatoes cook, chop the smoked turkey bacon into bite-sized pieces. Cook in a skillet over medium heat until crisp. Remove and drain on paper towels.
- Make the dressing: In the same skillet, drain most of the bacon fat leaving about 2 tablespoons. Add apple cider vinegar, yellow mustard, vegetarian Worcestershire sauce, olive oil, salt, and pepper. Whisk over low heat until the dressing is warm and slightly thickened.
- Combine the salad: Place the warm potatoes in a large bowl. Add diced red onion and fresh parsley. Pour the warm dressing over the potatoes and gently toss to coat without breaking the potatoes.
- Add crispy bacon and serve: Sprinkle the crispy smoked turkey bacon over the salad and give it one last gentle mix. Serve immediately or allow it to rest to deepen flavors.
