Instructions

  1. Cook the potatoes: Wash and quarter the Yukon Gold potatoes into even sizes. Boil them in salted water for about 10-15 minutes until just tender but still firm. Drain and set aside.
  2. Prepare the smoked turkey bacon: While the potatoes cook, chop the smoked turkey bacon into bite-sized pieces. Cook in a skillet over medium heat until crisp. Remove and drain on paper towels.
  3. Make the dressing: In the same skillet, drain most of the bacon fat leaving about 2 tablespoons. Add apple cider vinegar, yellow mustard, vegetarian Worcestershire sauce, olive oil, salt, and pepper. Whisk over low heat until the dressing is warm and slightly thickened.
  4. Combine the salad: Place the warm potatoes in a large bowl. Add diced red onion and fresh parsley. Pour the warm dressing over the potatoes and gently toss to coat without breaking the potatoes.
  5. Add crispy bacon and serve: Sprinkle the crispy smoked turkey bacon over the salad and give it one last gentle mix. Serve immediately or allow it to rest to deepen flavors.
