Ingredients

Scale

Chicken and Main Ingredients

  • 4 bone-in chicken thighs, seasoned with salt and pepper
  • 4 slices smoked turkey bacon, chopped
  • 1 cup long-grain white rice
  • 1 cup chicken broth

Aromatics and Flavorings

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/4 cup plant-based cheese, shredded
  • 1 teaspoon natural gelling agent
  • Salt and pepper, to taste

Herbs and Garnishes

  • 1 tablespoon fresh parsley or thyme, chopped

Instructions

  1. Prep and Brown the Chicken: Season the chicken thighs generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Brown the chicken on both sides until golden and crispy, about 4-5 minutes per side. Remove chicken and set aside.
  2. Sauté Aromatics and Turkey Bacon: In the same skillet, add the chopped smoked turkey bacon and cook until crispy. Add diced onions and minced garlic, stirring until fragrant and translucent.
  3. Add Rice and Liquid Ingredients: Stir in the long-grain white rice, coating each grain with the pan flavors. Pour in the chicken broth, apple cider vinegar, and vegetarian Worcestershire sauce (natural). Bring to a simmer, scraping the pan bottom to lift caramelized bits.
  4. Return Chicken to the Pan and Simmer: Nestle the browned chicken thighs into the skillet on top of the rice. Cover, reduce heat to low, and let simmer until the rice absorbs the liquid and the chicken is cooked through, about 20-25 minutes.
  5. Finish with Plant-Based Cheese and Natural Gelling Agent: Once the rice is tender and chicken cooked, sprinkle plant-based cheese evenly over the top. Mix the natural gelling agent into the sauce to thicken it for a creamy texture. Cover and let the cheese melt for a few minutes before serving.

Notes

  • Use bone-in thighs for extra flavor and moisture.
  • Simmer rice low and slow to achieve tender, fluffy grains.
  • Reserve some plant-based cheese to sprinkle on top before serving for extra creaminess.
  • Add fresh herbs right before serving to preserve their bright aroma.
  • Do not skip the smoked turkey bacon for that essential smoky depth.
