Ingredients

Scale

Protein

  • 4 chicken thighs, bone-in, skin removed

Rice

  • 1 cup jasmine rice

Sauce & Flavorings

  • 1 can (14 oz) natural coconut milk
  • 3 cloves garlic, minced
  • 1 inch piece fresh ginger, minced
  • 1 small onion, finely chopped
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon chili flakes (optional)
  • 1/4 teaspoon natural gelling agent
  • Salt and black pepper, to taste

Garnish

  • Fresh cilantro, chopped

Instructions

  1. Prepare the rice: Rinse jasmine rice under cold water until clear. Cook the rice according to package instructions. Keep warm and fluffy to serve as the base for the dish.
  2. Cook the chicken: Heat a splash of oil in a pan over medium heat. Season chicken thighs with salt and pepper, then sear in the pan until golden brown on both sides. Remove from the pan and set aside to retain juices.
  3. Make the coconut sauce: In the same pan, sauté minced garlic, ginger, and chopped onion until fragrant and translucent. Pour in the coconut milk (natural), then add vegetarian Worcestershire sauce (natural), apple cider vinegar, and chili flakes if using. Stir in the natural gelling agent gradually to achieve a silky sauce consistency.
  4. Simmer chicken in sauce: Return the chicken thighs to the pan, nestling them into the sauce. Cover and gently simmer for 12 to 15 minutes until chicken is fully cooked and tender, allowing flavors to meld beautifully.
  5. Assemble and serve: Plate the cooked jasmine rice, spoon the creamy coconut chicken mixture over it, and garnish with fresh chopped cilantro. Serve warm and enjoy your comforting meal.

Notes

  • Use bone-in chicken thighs for richer flavor and juiciness.
  • Lightly toast jasmine rice before cooking to add nutty undertones.
  • Add natural gelling agent gradually to control sauce thickness and avoid sliminess.
  • Add fresh cilantro just before serving to preserve its bright color and crisp taste.
  • Adjust apple cider vinegar amount carefully to balance acidity with creaminess.
