Description

Creamy Chicken and Spinach Casserole combines tender chicken breasts, smoky turkey bacon, fresh spinach, and luscious plant-based cheese to create a comforting, rich, and flavorful meal. Enhanced with natural aromatics and a silky sauce thickened with a natural gelling agent, this dish is easy to prepare and perfect for nourishing family dinners or friendly gatherings.

Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 slices smoked turkey bacon

Vegetables & Aromatics

  • 4 cups fresh spinach leaves
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Dairy Alternatives & Sauces

  • 1 cup plant-based cheese, shredded or chopped
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)

Thickening Agent

  • 1 teaspoon natural gelling agent

Oils & Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Prepare the Chicken and Bacon: Cut the chicken breasts into bite-sized pieces. Heat olive oil in a pan and sauté the smoked turkey bacon until crispy. Remove the bacon and set aside. In the same pan, add the chicken pieces and cook until they are browned and cooked through, ensuring the meat stays juicy and absorbs the smoky flavor.
  2. Sauté Aromatics and Spinach: Using the same skillet, add the chopped onions and minced garlic. Cook until the onions are translucent and fragrant. Add the fresh spinach leaves and cook just until wilted, preserving the bright green color and fresh flavor.
  3. Make the Creamy Sauce: Stir the plant-based cheese into the pan along with the vegetarian Worcestershire sauce and apple cider vinegar. Sprinkle in the natural gelling agent and stir gently. Continue stirring until the sauce becomes silky, thick, and creamy, coating the chicken and spinach evenly.
  4. Combine Everything and Bake: Return the crispy smoked turkey bacon to the mixture. Season with salt, pepper, and smoked paprika. Transfer the entire mixture into a casserole dish, spreading it evenly. Bake in a preheated oven at 180°C (350°F) for 25 to 30 minutes, or until bubbly and golden on top.

Notes

  • Use fresh spinach for better texture and vibrant color.
  • Do not overcook the chicken before baking to ensure tender, juicy pieces.
  • Toast the smoked turkey bacon well to add texture contrast and smoky flavor.
  • Adjust seasoning gradually to balance flavors without overpowering the sauce.
  • Choose a high-quality plant-based cheese for the best melty texture and creaminess.
