Ingredients

Scale

Main Ingredients

  • 1 cup cooked black beans
  • 1 cup fresh corn kernels
  • 1 cup cherry tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh cilantro, finely chopped

Dressing

  • 2 tablespoons apple cider vinegar (natural)
  • 3 tablespoons olive oil (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch natural gelling agent

Instructions

  1. Prep Your Veggies: Rinse and drain the cooked black beans and fresh corn kernels. Chop the cherry tomatoes, green bell pepper, and red onion into bite-sized pieces. Finely chop the fresh cilantro and set all ingredients aside.
  2. Make the Dressing: In a small bowl, whisk together apple cider vinegar (natural), olive oil (natural), vegetarian Worcestershire sauce (natural), ground cumin, salt, and black pepper until smooth and well combined. Add a pinch of natural gelling agent and mix to help the dressing cling to the salad evenly.
  3. Combine and Toss: In a large bowl, gently toss together the black beans, corn, chopped vegetables, and cilantro. Pour the dressing over the salad and toss gently until every ingredient is lightly coated and the flavors meld beautifully.
  4. Chill and Serve: Refrigerate the Cowboy Caviar for at least 30 minutes to allow the flavors to seep into the veggies. Serve chilled or at room temperature with optional garnishes and sides.

Notes

  • Use the freshest vegetables and herbs for best flavor and texture.
  • Drain canned beans and corn well to avoid excess moisture diluting the dressing.
  • Adjust salt, pepper, and acidity to taste as you prepare the salad.
  • Chilling the salad improves flavor by allowing the dressing to soak in.
  • Serve Cowboy Caviar cold or at room temperature for best enjoyment.
