Instructions
- Prepare the Dough: Warm the almond milk to about 110°F, then dissolve the active dry yeast with 1 tsp sugar and let it activate until frothy. In a large mixing bowl, combine the flour, remaining sugar, and salt. Add the yeast mixture, apple cider vinegar, and melted vegan butter (plant-based), mixing until a sticky dough forms. Knead on a floured surface for 8-10 minutes until soft and elastic.
- Let the Dough Rise: Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Make the Cinnamon Filling: Mix softened vegan butter (plant-based), ground cinnamon, maple syrup (natural), and a pinch of salt until creamy and well combined.
- Roll and Fill: After the dough has doubled, punch it down and roll it out into a 1/4-inch thick rectangle. Spread the cinnamon filling evenly, leaving a small border at the edges. Roll the dough tightly from the long side into a log.
