Ingredients
Scale
Dough
- 3 1/2 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 cup plant-based milk, warmed to lukewarm
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1/4 cup vegetable oil
Cinnamon Filling
- 1/2 cup brown sugar
- 2 tablespoons ground cinnamon
- 1 tablespoon vegetarian Worcestershire sauce (natural)
Glaze
- 1/4 cup maple syrup (natural)
- 1 to 2 teaspoons water
- 1/2 teaspoon natural gelling agent
Instructions
- Preparing the Dough: Warm the plant-based milk to a lukewarm temperature and sprinkle the active dry yeast on top. Let it bloom for about 5 minutes until frothy. In a large bowl, combine the flour, salt, and a portion of the brown sugar. Slowly add the yeast mixture and vegetable oil, mixing until a soft dough forms. Knead the dough for 8 to 10 minutes until smooth and elastic. Cover the dough and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Making the Cinnamon Filling: While the dough is rising, mix the brown sugar, ground cinnamon, and vegetarian Worcestershire sauce (natural) in a bowl. Prepare this filling fresh for spreading once the dough has risen.
- Assembling the Buns: Roll the risen dough into a large rectangle on a floured surface. Lightly brush the surface with vegetable oil, then evenly sprinkle the cinnamon filling over it. Roll the dough tightly from the long edge to form a log. Slice the log into individual buns about 1.5 to 2 inches thick. Arrange the buns in a greased baking pan, leaving space between them for expansion.
- Proofing and Baking: Allow the shaped buns to rest and rise for another 30 to 45 minutes. Meanwhile, preheat the oven to 180°C (350°F). Bake the buns for 20 to 25 minutes or until golden brown and aromatic.
- Glazing the Cinnamon Buns: While baking, prepare the glaze by mixing maple syrup (natural) with water and the natural gelling agent until shiny. Brush the warm glaze over the buns immediately after removing them from the oven to lock in moisture and add sweetness.
Notes
- Always ensure the yeast is fresh and active for proper rising.
- Keep the dough slightly sticky by adding flour sparingly while kneading for soft texture.
- Roll the dough evenly to create consistent cinnamon swirls.
- Do not overbake; remove once buns are golden to avoid drying out.
- Apply glaze while buns are still warm for a beautiful finish.
