Ingredients

Scale

Steak and Marinade

  • 1 lb flank or sirloin steak
  • 3 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Vegetables and Base

  • 1 cup cooked rice or quinoa
  • 1 cup bell peppers (red, yellow, or orange), chopped
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro leaves, chopped

Instructions

  1. Marinate the Steak: Whisk together fresh lime juice, minced garlic, vegetarian Worcestershire sauce (natural), olive oil, ground cumin, smoked paprika, salt, and black pepper. Coat the steak in the marinade and let it sit for at least 15 minutes to absorb the flavors.
  2. Prepare the Veggies and Base: While the steak marinates, chop the bell peppers and halve the cherry tomatoes. Dice the avocado just before serving to keep it fresh. Cook the rice or quinoa according to package instructions so it is ready when the steak finishes cooking.
  3. Cook the Steak: Heat a skillet or grill pan over medium-high heat and add a little olive oil. Cook the steak for 4-5 minutes per side depending on thickness and your preferred doneness. Remove from heat and let the steak rest for a few minutes before slicing thinly against the grain.
  4. Assemble the Bowls: Layer cooked rice or quinoa at the bottom of bowls. Arrange sliced steak, chopped bell peppers, halved cherry tomatoes, and diced avocado on top. Sprinkle generously with chopped cilantro and drizzle any leftover marinade or a squeeze of fresh lime juice for extra brightness.

Notes

  • Use fresh lime juice to brighten the dish’s flavors.
  • Allow the steak to rest after cooking to preserve its juices and tenderness.
  • Slice the steak thinly against the grain for the best texture.
  • Marinate the steak and chop vegetables in advance to save time.
  • Adjust seasoning to taste, balancing tang, salt, and spice.
