Ingredients

Scale

Salad Ingredients

  • 2 chicken breasts
  • 2 cups cooked day-old jasmine or basmati rice
  • 4 cups mixed greens
  • 4 slices smoked turkey bacon
  • 1 medium carrot, julienned
  • 1 cucumber, julienned
  • 1 cup cherry tomatoes, halved

Dressing

  • 3 tablespoons apple cider vinegar (natural)
  • 3 tablespoons olive oil (natural)
  • 1 teaspoon Dijon mustard (natural)
  • 1 tablespoon honey (natural)
  • 1/2 teaspoon garlic powder (natural)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Season chicken breasts with salt, pepper, and a little garlic powder. Cook them in a hot pan with a splash of olive oil (natural) until golden brown and cooked through. Let the chicken rest for a few minutes before slicing into thin strips.
  2. Cook and Crisp the Rice: Cook the rice as usual, then allow it to cool completely. Heat a non-stick pan over medium heat and lightly toast the rice until it becomes crispy and golden. Stir carefully to avoid burning, then remove from heat.
  3. Prepare the Veggies and Bacon: Chop mixed greens, slice cucumbers and carrots into thin sticks, halve cherry tomatoes, and crisp up smoked turkey bacon in a pan until crunchy. Drain bacon on paper towels to remove excess oil.
  4. Make the Tangy Dressing: In a small bowl, whisk together apple cider vinegar (natural), olive oil (natural), Dijon mustard (natural), honey (natural), garlic powder (natural), salt, and pepper until well combined and smooth.
  5. Assemble the Salad: In a large mixing bowl, combine the greens, crispy rice, veggies, smoked turkey bacon, and sliced chicken. Drizzle the dressing over everything, then toss gently to coat evenly without breaking the crispy rice.

Notes

  • Use day-old rice for the best texture when toasting to avoid sogginess.
  • Allow cooked chicken to cool before slicing to keep it juicy and tender.
  • Taste and adjust the dressing with more honey or vinegar to suit your preference.
  • Slice veggies thinly for easy mixing and a refreshing crunch.
  • Toss the salad just before serving to keep the crispy rice crunchy.
