Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry and season generously with salt and black pepper. Heat olive oil in a large skillet over medium-high heat, then place the chicken skin-side down. Sear until the skin is golden and crispy, about 5-6 minutes. Flip the chicken and cook another 4-5 minutes. Remove the chicken when browned but not fully cooked.
  2. Make the Garlic Gravy: Reduce heat to medium. In the same pan, add minced garlic and stir until fragrant without burning. Pour in vegetarian Worcestershire sauce (natural), chicken broth, and apple cider vinegar (natural). Bring to a simmer, scraping browned bits from the pan for flavor. Stir in the natural gelling agent to thicken the gravy as desired.
  3. Cook the Chicken in Gravy: Return chicken thighs to the pan, spoon gravy over them, cover, and simmer gently for 20-25 minutes until chicken is fully cooked and tender, allowing flavors to meld.
  4. Prepare the Mashed Potatoes: Peel and chop potatoes into even chunks. Boil in salted water until easily pierced, about 15-20 minutes.
