Description

Cheesy Potatoes combine tender russet potatoes with creamy plant-based cheese sauce and crispy smoked turkey bacon for a comforting, flavorful side dish. Enhanced with natural spices and a natural gelling agent, this easy-to-make baked casserole delivers a golden, bubbly finish perfect for family dinners and special occasions.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes, peeled and thinly sliced about 1/8-inch thick

Cheese Sauce

  • 1/4 cup plant-based butter
  • 2 cups plant-based cheese, shredded or sliced
  • 1 teaspoon onion powder (natural)
  • 1 teaspoon garlic powder (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 1 teaspoon natural gelling agent, mixed with 2 tablespoons water
  • Salt and freshly ground black pepper, to taste

Protein and Seasonings

  • 6 slices smoked turkey bacon, chopped into bite-sized pieces

Instructions

  1. Prep the Potatoes: Peel and thinly slice the russet potatoes to about 1/8-inch thickness. Rinse the slices in cold water to remove excess starch, then pat dry thoroughly to ensure even cooking and a tender texture.
  2. Cook the Smoked Turkey Bacon: Chop the smoked turkey bacon into bite-sized pieces. Cook them in a skillet over medium heat until crisp. Drain on paper towels and reserve any bacon fat if desired for additional flavor in the sauce.
  3. Make the Creamy Cheese Sauce: In a saucepan, melt the plant-based butter over medium heat. Whisk in the plant-based cheese along with onion powder (natural), garlic powder (natural), vegetarian Worcestershire sauce (natural), and apple cider vinegar (natural). Gradually stir in the natural gelling agent mixture to thicken the sauce. Season with salt and freshly ground black pepper to taste.
  4. Assemble the Dish: Grease a baking dish lightly. Layer half of the sliced potatoes evenly in the dish. Pour half of the cheese sauce over the potato layer, then sprinkle half of the crispy smoked turkey bacon on top. Repeat layering with the remaining potatoes, cheese sauce, and bacon, finishing with cheese sauce on top to seal the layers.
  5. Bake Until Golden: Preheat the oven to 350°F (175°C). Cover the baking dish loosely with foil and bake for 40 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly. Allow the dish to rest for 10 minutes before serving to set completely.

Notes

  • Choose russet potatoes for their fluffy texture and ability to absorb flavors.
  • Use two or three thin layers of potatoes for even cooking and the best texture.
  • Freshly ground pepper and quality natural onion and garlic powders enhance flavor.
  • Let the dish rest after baking to thicken the sauce and meld flavors.
  • For added texture, sprinkle crushed plant-based crackers or panko crumbs on top before baking.
