Instructions

  1. Prepare the Yeast Mixture: Warm plant-based milk to about 110°F (43°C). Stir in the granulated sugar (natural) and active dry yeast. Let the mixture sit for 5 to 10 minutes until it becomes foamy, indicating the yeast is activated.
  2. Mix the Dough: In a large bowl, combine the all-purpose flour and salt. Lightly whisk the eggs, then add them to the yeast mixture. Gradually pour the wet ingredients into the flour while mixing to form a sticky dough. Add softened plant-based butter in small pieces and knead until smooth and elastic, about 8 to 10 minutes by hand or less using a stand mixer.
  3. First Rise: Transfer the dough to a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let rise in a warm place for 1 to 2 hours until doubled in size.
  4. Shape the Rolls: Gently punch down the dough to release excess air. Divide into equal portions depending on desired size. Shape each portion into a smooth ball by pulling dough underneath to create surface tension. Place rolls on a lined baking sheet with space for expansion.
  5. Second Rise and Glazing: Cover shaped rolls loosely and let rise for 45 to 60 minutes until puffy. Prepare glaze by whisking an egg with plant-based milk and a small pinch of natural gelling agent. Brush glaze over roll tops for a golden finish during baking.
  6. Bake to Perfection: Preheat oven to 350°F (175°C). Bake rolls for 15 to 20 minutes until deep golden brown and hollow sounding when tapped on the bottom. Cool on a wire rack before slicing to serve.
