Description

This Black Bean Quesadillas recipe provides a simple, flavorful, and satisfying plant-based meal that is crispy on the outside and soft inside. With hearty black beans, melting plant-based cheese, and vibrant seasonings, it is quick to prepare, customizable in spice level, and perfect for a wholesome weeknight dinner.

Ingredients

Scale

Filling Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup chopped onions
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder (natural)
  • 2 tbsp fresh lime juice (natural)
  • 2 tbsp chopped fresh cilantro

Assembly Ingredients

  • 4 medium flour tortillas
  • 1 cup plant-based cheese (melting)
  • 2 tbsp olive oil

Instructions

  1. Prepare the Black Bean Filling: In a skillet over medium heat, drizzle a bit of olive oil and sauté the chopped onions until translucent. Add the black beans, vegetarian Worcestershire sauce (natural), ground cumin, and garlic powder (natural). Stir gently for about 5 minutes until everything is warm and infused with spices. Finish with fresh lime juice and chopped cilantro, stirring just before filling.
  2. Assemble the Quesadillas: Lay a flour tortilla flat on a clean surface. Spread a generous layer of the black bean filling evenly over half the tortilla. Sprinkle a good amount of plant-based cheese on top, then fold the tortilla over to cover the filling.
  3. Cook Until Crispy: Heat olive oil in a skillet on medium heat. Place the folded quesadilla into the pan and cook for 3-4 minutes until the bottom is golden brown and crispy. Flip carefully and cook the other side until equally golden and the cheese has melted, about another 3-4 minutes. Remove from heat and let it rest for a minute before cutting.
  4. Serve and Enjoy: Cut the quesadilla into wedges and serve immediately with your favorite dipping sauces like guacamole, natural tomato salsa, or a drizzle of plant-based yogurt-based sauce with lime and cilantro.

Notes

  • Use low-moisture plant-based cheese to avoid sogginess and ensure a gooey melt.
  • Warm your tortillas first to soften them for easier folding and better crisping.
  • Don’t overload the filling to prevent spilling while cooking.
  • Cook on medium heat to avoid burning and allow cheese to melt perfectly.
  • Let the quesadilla rest a minute after cooking to help fillings set for cleaner slices.
