Instructions
- Prepare the Dough: Bring water, a pinch of salt, apple cider vinegar (natural), and vegetable oil to a gentle boil in a saucepan over medium heat. Once simmering, remove from heat immediately and stir in all-purpose flour and natural gelling agent until a smooth, cohesive dough forms.
- Heat the Oil for Frying: Pour vegetable oil into a deep, heavy-bottomed pan and heat to about 350°F (175°C). Use a kitchen thermometer to maintain correct temperature for even cooking and minimal oil absorption.
- Pipe the Dough: Transfer dough to a piping bag fitted with a large star-shaped nozzle. Pipe 4-5 inch long strips directly into the hot oil and cut with scissors to desired length as you go.
- Fry Until Golden and Crisp: Fry churros in batches, turning occasionally, until golden brown and crisp on the outside, about 3-4 minutes. Remove with slotted spoon and drain excess oil on paper towels.
