Ingredients

Scale

For the Salmon:

  • 4 salmon fillets, skin-on (about 6 oz each)
  • 2 tablespoons olive oil (natural)
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

For the Slaw:

  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup mayonnaise (plant-based)
  • 2 tablespoons apple cider vinegar (natural)
  • Salt and black pepper, to taste

For the Tacos:

  • 8 soft corn tortillas
  • Fresh lime juice (natural), from 1 lime
  • Additional fresh cilantro, for garnish

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Rub them evenly with olive oil (natural), chili powder, garlic powder, and salt. Let the salmon rest for 10 minutes to absorb the spices.
  2. Cook the Salmon in the Air Fryer: Preheat your air fryer to 400°F (200°C). Place the seasoned salmon fillets in the basket skin-side down. Air fry for 8-10 minutes until cooked through and the salmon flakes easily with a fork.
  3. Make the Fresh Slaw: While the salmon cooks, shred the red cabbage and carrots. Chop the green onions and cilantro. In a bowl, combine the shredded vegetables with mayonnaise (plant-based), apple cider vinegar (natural), salt, and pepper. Mix well to coat evenly.
  4. Warm the Tortillas: Heat the corn tortillas in a dry skillet or directly in a pan for about 20 seconds per side until soft and pliable, ready for assembling.
  5. Assemble the Tacos: Flake the cooked salmon into bite-sized pieces. Divide the salmon equally among the warm tortillas. Top each with a generous amount of slaw, a squeeze of fresh lime juice (natural), and sprinkle with additional cilantro to garnish.

Notes

  • Adjust cooking time based on salmon fillet thickness for optimal doneness.
  • Do not overcrowd the air fryer basket to ensure even cooking.
  • Use freshly squeezed lime juice for best flavor.
  • Lightly toast tortillas before adding fillings to prevent sogginess.
  • Prepare the slaw ahead of time to let flavors meld nicely.
