Instructions

  1. Prepare the Ingredients: Thaw and peel shrimps if frozen, then rinse under cool water. Slice bell peppers and carrots into thin, uniform strips. Finely chop garlic and ginger. Slice green onions into thin rounds, reserving some for garnish. Rinse and drain udon noodles or cook fresh if needed.
  2. Stir-Fry Aromatics and Shrimps: Heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Add the shrimps and cook until pink and opaque, approximately 2 to 3 minutes per side. Remove shrimps and set aside.
  3. Cook the Vegetables: In the same pan, add a little more sesame oil if necessary. Toss in sliced bell peppers and carrots. Stir-fry quickly to keep the vegetables crisp-tender, about 3 to 4 minutes.
  4. Combine Noodles, Shrimps, and Sauce: Return udon noodles and shrimps to the pan with the vegetables. Pour in soy sauce (natural), vegetarian Worcestershire sauce (natural), apple cider vinegar, and add the optional natural gelling agent if a thicker sauce is preferred. Toss everything together and cook for another 2 to 3 minutes to meld flavors and warm the noodles through.
  5. Finish and Garnish: Stir in most of the green onions and sprinkle sesame seeds on top. Adjust seasoning with extra soy sauce (natural) or vinegar to taste. Serve immediately while hot and flavorful.
