This Easy Turkey Meatloaf recipe features smoked turkey bacon, plant-based cheese, and a natural gelling agent to create a moist and flavorful dinner perfect for busy weeknights. Ready in under an hour, it offers a delicious smoky depth and creamy texture without dairy, suitable for meal prep or family meals.

Ingredients

Scale

Meatloaf Base

  • 1 lb lean ground turkey
  • 4 slices smoked turkey bacon, chopped
  • 1 cup plant-based cheese, shredded
  • 1 cup breadcrumbs (use gluten-free if needed)
  • 1 tbsp natural gelling agent (such as pectin, agar, or carrageenan)

Aromatics and Seasoning

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Bacon and Aromatics: Chop smoked turkey bacon into small pieces. In a skillet, lightly sauté the bacon with finely diced onion and minced garlic until fragrant and slightly caramelized, releasing smoky aromas.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine ground turkey, the cooked bacon and onion mixture, plant-based cheese, breadcrumbs, natural gelling agent, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), fresh herbs, salt, and pepper. Mix gently until evenly incorporated.
  3. Shape and Bake: Transfer the mixture to a parchment-lined loaf pan or shape by hand on a baking tray. Press firmly to compact the loaf. Bake in a preheated oven at 375°F (190°C) for about 45 minutes or until the internal temperature reaches 165°F (74°C).
  4. Rest and Slice: Remove the meatloaf from the oven and let rest for 10 minutes to allow juices to redistribute for clean slicing and to prevent crumbling.

Notes

  • Avoid overmixing the meat mixture to keep the meatloaf tender.
  • If the mixture feels dry, add a splash of grape juice or a little olive oil for extra moisture.
  • Use a natural gelling agent to help hold the meatloaf’s shape without heaviness.
  • Allow the meatloaf to rest before slicing to maintain perfect slices.
  • Slice warm but rested for smooth cuts.
