Instructions

  1. Prepare the Ingredients: Slice the chicken breast thinly and separate broccoli into bite-sized florets. Soak the flat rice noodles in warm water for about 10 minutes until softened but still firm to the bite. Mince the garlic and cut smoked turkey bacon into small strips.
  2. Cook the Chicken and Bacon: Heat vegetable oil in a large pan or wok over medium-high heat. Add the sliced chicken and smoked turkey bacon, stir-frying until the chicken is fully cooked and the bacon is slightly crispy. Remove from the pan and set aside.
  3. Stir-Fry Broccoli and Garlic: In the same pan, add a little more oil if needed. Toss in the minced garlic and broccoli florets. Stir-fry for 3 to 4 minutes until the broccoli is tender-crisp and fragrant.
  4. Add the Noodles: Drain the soaked noodles and add them to the pan with the broccoli. Toss to combine and allow the noodles to soften further while absorbing flavors.
  5. Mix the Sauce and Eggs: In a small bowl, whisk together soy sauce (natural), oyster sauce (natural), vegetarian Worcestershire sauce, apple cider vinegar, and brown sugar (natural). Push the noodles to one side of the pan, crack in the eggs, and scramble gently. Once cooked, mix the scrambled eggs thoroughly into the noodles.
  6. Combine Everything: Return the cooked chicken and smoked turkey bacon to the pan. Pour the sauce over all ingredients and toss everything together over medium heat for 2 to 3 minutes to allow the sauce to fully coat the noodles and other ingredients.
