Instructions

  1. Prepare the Spinach and Aromatics: Wash and finely chop the fresh spinach. Lightly sauté the spinach and chopped onion in olive oil over medium heat until wilted and fragrant, about 3-4 minutes. This softens the spinach and releases the flavors.
  2. Mix the Meatball Ingredients: In a large bowl, combine the ground meat, sautéed spinach and onions, minced garlic, breadcrumbs, chopped parsley, vegetarian Worcestershire sauce, egg, salt, pepper, and natural gelling agent. Gently mix until all ingredients are fully incorporated, taking care not to overmix to maintain tenderness.
  3. Form the Meatballs: Using your hands or a small scoop, shape the mixture into uniform meatballs about golf ball-sized. Place them evenly spaced on a plate or baking sheet to prepare for cooking.
  4. Cook the Meatballs: Preheat the oven to 375°F (190°C). Heat olive oil in a skillet over medium heat and brown the meatballs for 4-5 minutes per side.
