Ingredients
Scale
Potatoes and Bacon
- 4 cups medium-starch potatoes (Yukon Gold or red), peeled and cut into chunks
- 6 slices smoked turkey bacon
Dressing
- 1 cup plant-based mayo
- 2 teaspoons Dijon mustard (natural)
- 1 tablespoon apple cider vinegar (natural)
- Salt, to taste
- Black pepper, to taste
Vegetables and Herbs
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh dill, chopped
Instructions
- Prepare the Potatoes: Wash and peel the potatoes if desired, then cut into uniform chunks for even cooking. Boil in salted water for 10 to 15 minutes, or until tender but still firm when pierced. Drain and let cool slightly.
- Cook the Smoked Turkey Bacon: While the potatoes cook, crisp the smoked turkey bacon in a pan over medium heat. Once golden and crunchy, drain on paper towels and crumble into bite-sized pieces.
- Make the Dressing: In a large bowl, whisk together the plant-based mayo, Dijon mustard (natural), apple cider vinegar (natural), salt, and pepper until smooth and well blended.
- Combine All Ingredients: Add the slightly cooled potatoes, crumbled bacon, chopped celery, and red onion to the dressing. Gently fold to coat all ingredients without mashing the potatoes.
- Add Fresh Herbs and Chill: Stir in the freshly chopped dill. Cover and refrigerate the salad for at least one hour to allow flavors to meld.
Notes
- Use medium-starch potatoes like Yukon Gold or red potatoes to maintain texture.
- Do not overcook potatoes to prevent mushiness.
- Chill the salad before serving to enhance flavor fusion.
- Add crunchy vegetables such as celery last to preserve freshness.
- Adjust salt, pepper, or apple cider vinegar to taste before chilling.
