  • 2 lbs starchy potatoes (such as Russets), peeled and chopped
  • 3 tbsp olive oil
  • 1/2 cup plant-based cheese
  • Salt and black pepper, to taste

Finishing Touch

  • 1/4 cup plant-based cheese for topping

Instructions

  1. Prepare the Mashed Potato Topping: Boil peeled and chopped potatoes until tender. Drain well, then mash thoroughly with olive oil, plant-based cheese, salt, and pepper until creamy and smooth. Set aside to cool slightly.
  2. Cook the Meat and Vegetable Filling: Heat olive oil in a large skillet over medium heat. Add diced onions, carrots, and celery; sauté until softened and fragrant. Add ground meat and cook until browned. Stir in garlic, vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), vegetable broth, thyme, salt, and pepper. Sprinkle in the natural gelling agent and peas, then simmer until the mixture thickens and flavors combine.
