Description

Warm and comforting scalloped potatoes layered with thinly sliced potatoes, smoky turkey bacon, and creamy plant-based cheese sauce. This recipe blends tender potatoes and savory flavors in a creamy, cheesy (plant-based) sauce enriched with natural herbs and spices. Perfect for cozy dinners, it offers a rich texture and smoky punch, easily adaptable to dietary preferences.

Ingredients

Scale

Potatoes and Vegetables

  • 4 large starchy or all-purpose potatoes, peeled and thinly sliced (about 1/8 inch thick)
  • 1 medium onion, thinly sliced

Protein

  • 6 slices smoky turkey bacon, cooked crisp and chopped into bite-sized pieces

Sauce

  • 2 cups plant-based milk
  • 3 cloves garlic, minced (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar (natural)
  • 1 teaspoon natural gelling agent
  • 1 teaspoon fresh thyme or rosemary, finely chopped
  • Salt and freshly ground black pepper, to taste

Cheese and Topping

  • 1 1/2 cups shredded plant-based cheese (such as cheddar (plant-based) or mozzarella (plant-based))
  • Optional: toasted breadcrumbs (natural) for topping

Instructions

  1. Prepare the potatoes and bacon: Peel the potatoes and slice them into uniform thin rounds about 1/8 inch thick for even cooking. Cook the smoky turkey bacon until crisp, then chop it into bite-sized pieces. Set both aside for layering.
  2. Make the creamy sauce: In a saucepan, gently warm the plant-based milk with minced garlic (natural), vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), fresh herbs, and a pinch of salt and pepper. Stir in the natural gelling agent constantly until the sauce thickens into a smooth and luscious consistency.
  3. Layer the ingredients: Grease a baking dish lightly. Arrange a layer of potato slices evenly on the bottom, followed by a layer of onions, then sprinkle some smoky turkey bacon pieces, and top with a portion of shredded plant-based cheese. Pour some of the creamy sauce over these layers to keep everything moist and flavorful. Repeat these layers until all ingredients are used, finishing with a generous top layer of plant-based cheese. Optionally, sprinkle toasted breadcrumbs (natural) on top for extra crunch.
  4. Bake until bubbly and golden: Cover the baking dish with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes. Remove the foil and bake uncovered for an additional 15 minutes, or until the top is golden brown and the sauce bubbles enticingly. Let the dish rest for about 10 minutes before serving to set the layers.

Notes

  • Use a mandoline or sharp knife to slice potatoes uniformly for even cooking.
  • Alternate layers of cheese and turkey bacon to distribute flavors throughout the dish.
  • Allow the sauce to thicken well before assembling to bind the layers perfectly.
  • Let the scalloped potatoes rest after baking to help them cut cleanly and hold shape.
  • Adjust seasoning with salt and pepper before baking to taste.
  • Variations include adding mushrooms, spinach, or caramelized onions for extra heartiness.
  • For a spicy twist, add smoked paprika or chili flakes.
  • Try different plant-based cheeses such as sharp cheddar (plant-based) or mozzarella (plant-based) for unique flavors.
  • Substitute turkey bacon with smoked tempeh or crispy mushrooms if desired.
  • Fresh herbs like parsley, sage, or dill can be used to vary the herbal notes.
