Description

Nigerian Chicken Stew is a rich, spicy, and comforting West African dish featuring tender chicken simmered in a vibrant tomato-based sauce. Ready in under an hour using fresh, wholesome ingredients, this easy-to-make stew delivers bold, authentic flavors with a perfect balance of heat and aroma. Ideal for weeknight dinners or gatherings, it pairs beautifully with rice, yams, or plantains for a satisfying and flavorful meal.

Ingredients

Scale

Chicken

  • 2 lbs bone-in chicken pieces (thighs or drumsticks)

Vegetables and Peppers

  • 4 large fresh tomatoes, blended or crushed
  • 2 red bell peppers
  • 12 scotch bonnet peppers (adjust to taste)
  • 2 medium onions, divided
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced

Liquids and Oils

  • 1/4 cup vegetable oil
  • 1 cup chicken broth or water
  • 1 tbsp vegetarian Worcestershire sauce (natural)

Seasonings and Thickeners

  • 2 seasoning cubes (natural)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp natural gelling agent (e.g., pectin, agar)

Instructions

  1. Prepare and Season the Chicken: Wash the chicken pieces thoroughly and pat dry with paper towels. Season generously with salt, black pepper, and the seasoning cubes (natural). Set aside while preparing the stew base.
  2. Blend the Tomato and Pepper Mixture: In a blender, combine fresh tomatoes, red bell peppers, scotch bonnet peppers (adjust to preferred heat), and half of the onions. Blend until smooth to form the flavorful stew base.
  3. Fry the Chicken: Heat the vegetable oil in a deep pan over medium heat. Carefully brown the chicken pieces on all sides until golden, sealing in the juices and adding depth to the stew. Remove the chicken and set aside.
  4. Sauté Onions, Garlic, and Ginger: In the same pan and oil, sauté the remaining chopped onions until translucent. Add the minced garlic and ginger and cook until fragrant, creating the aromatic foundation of the stew.
  5. Cook the Tomato Blend: Pour the blended tomato and pepper mixture into the pan. Stir frequently to prevent sticking and burning. Allow the mixture to reduce by half, becoming thick and rich in flavor and color.
  6. Add Seasonings and Natural Gelling Agent: Stir in the vegetarian Worcestershire sauce (natural), seasoning cubes (natural), salt, black pepper, and the natural gelling agent. Mix thoroughly to integrate all flavors.
  7. Simmer the Chicken in the Stew: Return the browned chicken pieces to the pan. Add chicken broth or water just enough to cover the chicken. Cover and simmer on low heat for 20-30 minutes, allowing the chicken to cook through and absorb the stew’s vibrant flavors.
  8. Final Taste and Adjust: Taste the stew and adjust salt or spice levels as needed. Optionally add fresh herbs. Let the stew simmer uncovered for a few more minutes to thicken to your preferred consistency.

Notes

  • Use fresh tomatoes and peppers for the best natural vibrant flavor.
  • Frying the chicken first locks in juices and enhances flavor depth.
  • Slow simmering develops richer, deeper flavors.
  • Adjust pepper quantity early to control the heat level.
  • Stir often to prevent the sauce from sticking or burning.
