Description

Mushroom Gravy is a rich and creamy plant-based sauce made with savory mushrooms and natural ingredients. It adds deep umami flavor and warmth, perfect for enhancing mashed potatoes, roasted vegetables, and plant-based proteins. Easy to prepare with simple steps, this versatile gravy offers a smooth texture and wholesome taste, ideal for cozy dinners or special occasions.

Ingredients

Scale

Mushrooms and Aromatics

  • 1 cup fresh cremini mushrooms, chopped
  • 1 cup fresh shiitake mushrooms, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic (natural), minced

Liquids and Sauces

  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 cup vegetable broth
  • 1 tablespoon apple cider vinegar

Thickening and Texture

  • 2 tablespoons plant-based butter
  • 2 tablespoons flour (use gluten-free flour blend for gluten-free option)
  • 1 teaspoon natural gelling agent

Seasoning

  • Salt, to taste
  • Fresh ground pepper, to taste

Instructions

  1. Sauté the Aromatics and Mushrooms: Melt the plant-based butter in a skillet over medium heat. Add the finely chopped onion and minced garlic (natural) and cook until softened and fragrant. Add the cremini and shiitake mushrooms, cooking until they release their moisture and begin to brown, forming a rich base of flavor.
  2. Add Flour and Cook: Sprinkle the flour evenly over the sautéed mushrooms and stir continuously. Cook for about 2 minutes to eliminate any raw flour taste and develop a smooth texture for the gravy.
  3. Deglaze and Build Flavor: Pour in the apple cider vinegar to deglaze the pan, scraping up all the caramelized bits. Slowly add the vegetable broth while stirring constantly. Stir in the vegetarian Worcestershire sauce (natural) to boost the umami depth.
  4. Thicken with Natural Gelling Agent: Sprinkle in the natural gelling agent gradually while stirring. Keep the mixture at a gentle simmer until it thickens to a creamy consistency that coats the back of a spoon.
  5. Season and Finish: Add salt and freshly ground pepper to taste. Stir well and remove from heat. Let the gravy rest for a few minutes to allow the flavors to blend before serving.

Notes

  • Use fresh mushrooms for the best texture and flavor.
  • Do not skip deglazing with apple cider vinegar to lift caramelized bits and add acidity.
  • Cook the flour thoroughly to avoid raw taste and ensure smoothness.
  • Simmer gently to blend flavors and achieve ideal thickness.
  • Adjust seasoning at the end according to taste preferences.
