Description

Mediterranean Quesadillas are a quick, flavorful, and wholesome meal combining fresh veggies, creamy plant-based cheese, and savory smoked turkey slices for a vibrant Mediterranean-inspired dish that is perfect for lunch or a fuss-free dinner.

Ingredients

Base

  • Flour tortillas, soft and pliable

Proteins

  • Smoked turkey slices

Cheese

  • Plant-based cheese, creamy and melting

Vegetables & Herbs

  • Fresh spinach leaves
  • Sliced bell peppers (red, orange, or yellow)
  • Chopped cherry tomatoes
  • Red onion slices
  • Chopped fresh parsley

Seasonings & Cooking Ingredients

  • Olive oil (natural), for sautéing
  • Apple cider vinegar (natural), splash for flavor
  • Ground cumin, pinch
  • Black pepper, freshly cracked
  • Salt, to taste

Instructions

  1. Prepare the Vegetables: Wash and slice all fresh veggies. Heat olive oil (natural) in a pan over medium heat, then sauté bell peppers and red onions until softened but vibrant. Add a splash of apple cider vinegar (natural), ground cumin, salt, and pepper. Remove from heat and set aside.
  2. Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread a generous layer of plant-based cheese evenly over the tortilla, then layer spinach leaves, sautéed vegetables, cherry tomatoes, parsley, and smoked turkey slices. Sprinkle some more plant-based cheese on top, and place another tortilla over the filling to form a sandwich.
  3. Cook Until Golden and Melted: Heat a non-stick skillet over medium heat. Carefully transfer the assembled quesadilla onto the pan and cook for 3 to 4 minutes on each side, pressing gently with a spatula until the tortillas turn golden brown and the cheese melts inside.
  4. Slice and Serve: Remove the quesadilla from the skillet and let it rest for one minute. Use a sharp knife or pizza cutter to slice into wedges. Serve warm with your favorite dips or salads.

Notes

  • Use fresh ingredients to maximize flavor and texture.
  • Don’t overload the filling to prevent breakage or difficulty flipping.
  • Cook on medium heat to crisp tortillas without burning while melting cheese inside.
  • Press gently while cooking to meld ingredients together for a perfect bite.
  • Adjust herbs and spices to suit your taste preferences.
