  2. Mix Sugar and Eggs: In a heatproof bowl, whisk together the sugar and eggs until smooth and slightly pale to develop sweetness and aid thickening.
  3. Cook the Mixture: Place the bowl over a simmering pot of water (double boiler). Stir constantly while gradually adding the lemon juice, zest, and plant-based butter. Continue stirring until the mixture thickens and coats the back of a spoon.
  4. Add Natural Gelling Agent: Sprinkle in the natural gelling agent while whisking continuously to help the curd set into a velvety texture as it cools.
