Ingredients
Scale
Main Ingredients
- 2–3 fresh ripe but firm peaches, sliced into thick wedges
- 1 cup shredded mozzarella cheese (vegetal)
- 4 cups mixed greens (spinach, arugula, or spring mix)
- 1/4 cup fresh basil leaves
Dressing
- 3 tablespoons extra virgin olive oil (plus more for brushing peaches)
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or agave syrup
- Salt to taste
- Freshly cracked black pepper to taste
Optional Garnishes
- 1/4 cup toasted nuts (walnuts or pecans)
- Extra fresh basil leaves
Instructions
- Prepare the Peaches: Wash and slice the peaches into thick wedges to ensure they hold together on the grill. Lightly brush with extra virgin olive oil to prevent sticking and to enhance the charred flavor.
- Grill the Peaches: Heat your grill or grill pan to medium-high. Place the peach wedges skin side down first and grill for 3-4 minutes until grill marks appear and the fruit softens slightly. Flip and grill an additional 2-3 minutes. Remove and let cool slightly.
- Assemble the Salad Base: In a large bowl, combine mixed greens and fresh basil leaves. Toss gently with a drizzle of olive oil, salt, and pepper to season the greens just before adding the grilled peaches to keep them fresh.
- Add Peaches and Cheese: Arrange the grilled peach wedges on top of the greens. Sprinkle shredded mozzarella cheese (vegetal) generously over the salad for creamy bites throughout.
- Prepare and Drizzle Dressing: Whisk together apple cider vinegar, honey or agave syrup, olive oil, salt, and pepper to taste. Drizzle lightly over the salad to complement the flavors without overpowering.
- Garnish and Serve: Finish with optional toasted nuts for crunch and extra fresh basil leaves. Serve immediately to enjoy the balance of warm peaches and cool greens.
Notes
- Choose firm peaches that hold their shape well on the grill and do not turn mushy.
- Do not overcrowd the grill to ensure proper grill marks and even cooking of peach slices.
- Use fresh herbs like basil or mint for the best flavor impact.
- Dress the salad just before serving to keep the greens crisp and prevent wilting.
- Adjust the sweetness and acidity in the dressing to match your personal taste.
