Ingredients

Scale

Chicken and Coating

  • 500g skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch (natural), for coating
  • Neutral oil, for frying

Sauce

  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 3 tbsp soy sauce (natural)
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar (natural)
  • 1/4 cup grape juice
  • 1/2 tsp chili flakes
  • 1/2 tsp natural gelling agent

Aromatics and Garnish

  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 scallions, chopped, for garnish
  • Toasted sesame seeds (optional), for garnish

Instructions

  1. Prepare the Chicken: Cut the chicken thighs into bite-sized pieces. Toss them thoroughly in cornstarch to create a thin, even coating. This step ensures a crispy texture after frying.
  2. Fry the Chicken: Heat neutral oil in a deep skillet or wok until shimmering. Fry the chicken pieces in batches without overcrowding until golden brown and crispy. Drain on paper towels to remove excess oil.
  3. Make the Sauce: In a bowl, whisk together vegetarian Worcestershire sauce (natural), soy sauce (natural), apple cider vinegar, brown sugar (natural), grape juice, chili flakes, and natural gelling agent until fully combined to create a sweet, tangy, and spicy glaze.
  4. Cook Aromatics: Remove excess oil from the skillet leaving 1-2 teaspoons. Sauté minced garlic and ginger quickly until fragrant. Pour in the sauce mixture and simmer gently, stirring often, until the sauce thickens to a shiny, sticky consistency.
  5. Combine and Serve: Add the crispy chicken back into the skillet, tossing well to coat each piece in the glossy sauce. Garnish with chopped scallions and toasted sesame seeds if desired. Serve immediately while warm.

Notes

  • Double coating the chicken with cornstarch enhances crispiness.
  • Maintain medium-high heat while frying to prevent greasy chicken.
  • Adjust the amount of natural gelling agent to achieve the perfect sauce thickness.
  • Use freshly minced garlic and ginger for the best flavor.
  • Fry chicken ahead of time and toss in sauce just before serving to save time.
