Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup warm water (about 110°F / 43°C)
  • 2 tbsp sugar (natural)
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup plant-based milk (warm)
  • 1 tbsp apple cider vinegar
  • 1 tbsp natural gelling agent

Garlic Butter (Plant-Based) Glaze

  • 1/4 cup garlic butter (plant-based)
  • Optional garnishes: fresh chopped parsley, chives, sea salt

Instructions

  1. Activate the Yeast: Dissolve the active dry yeast in warm water with a pinch of sugar. Let it sit for 5 to 10 minutes until it becomes bubbly and fragrant, ensuring it is ready to help the dough rise.
  2. Prepare the Dough: In a large bowl, mix the flour, salt, sugar, and natural gelling agent. Add the activated yeast mixture, olive oil, warm plant-based milk, and apple cider vinegar. Stir until a sticky dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic, developing the gluten needed for softness and structure.
  4. First Rise: Place the dough in an oiled bowl. Cover with a clean cloth and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Shape the Rolls: Punch down the dough and divide it into equal pieces. Roll each piece into a smooth ball and arrange them closely in a greased baking dish to encourage soft sides.
  6. Second Rise: Cover the rolls and proof them for 30 to 40 minutes until puffed and soft to the touch.
  7. Bake and Glaze: Bake at 375°F (190°C) for 15 to 20 minutes until golden brown. Remove immediately and brush generously with warm garlic butter (plant-based) to lock in flavor and keep the crust tender.

Notes

  • Use lukewarm water and milk to activate the yeast without killing it.
  • Do not skip kneading; it is essential for gluten development and the perfect texture.
  • Shape rolls tightly to maintain uniform air pockets for even rising.
  • Keep dough covered during rising to maintain moisture and prevent drying out.
  • Brush garlic butter (plant-based) on rolls immediately after baking to seal in moisture and flavor.
