Description

This Easy Creamed Spinach recipe is a rich and comforting side dish featuring smoky turkey bacon and creamy plant-based cheese. Its creamy texture and bright green color make it a versatile addition to any meal, perfect for breakfast, lunch, or dinner. The natural gelling agent thickens the sauce beautifully while a touch of apple cider vinegar adds a pleasant balance of flavors.

Ingredients

Scale

Spinach and Bacon

  • 4 cups fresh spinach, washed and thoroughly dried
  • 4 slices smoked turkey bacon

Aromatics

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Cream Sauce

  • 1/2 cup plant-based cream
  • 1/2 cup plant-based cheese, shredded or chopped
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon natural gelling agent
  • 1 teaspoon apple cider vinegar (natural)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Spinach and Bacon: Wash and thoroughly dry the fresh spinach to prevent sogginess. Cook the smoked turkey bacon in a skillet over medium heat until crisp, then set aside on paper towels to drain excess fat.
  2. Sauté Aromatics: In the same skillet, add the finely chopped onion and minced garlic. Sauté until the onions become translucent and fragrant, about 3 to 4 minutes, building the savory base of the sauce.
  3. Add Spinach and Cook Down: Add the spinach to the skillet and cook, stirring regularly, until it wilts and reduces significantly in volume. This concentrates the flavor and gives the right texture for creaming.
  4. Create the Cream Sauce: Reduce heat and stir in the plant-based cream, plant-based cheese, and vegetarian Worcestershire sauce (natural). Gradually sprinkle the natural gelling agent while stirring continuously to thicken the sauce. Add apple cider vinegar (natural) and season with salt and pepper to taste.
  5. Combine and Finish: Chop the crisp smoked turkey bacon into bite-sized pieces and fold into the creamy spinach mixture. Cook together for an additional 2 minutes until heated through and perfectly blended.

Notes

  • Use fresh spinach for better texture and color.
  • Dry spinach thoroughly to avoid watering down the sauce.
  • Add the natural gelling agent slowly while stirring to prevent lumps.
  • Balance acidity with apple cider vinegar (natural) for brightness.
  • Cook bacon separately to keep it crispy and avoid sogginess.
  • Season with salt and pepper at the end for best flavor harmony.
