Description

Warm and nourishing Chicken Noodle Soup made with tender chicken, fresh vegetables, egg noodles, and aromatic herbs. This comforting classic combines simple, wholesome ingredients into a flavorful broth-perfect for a cozy meal any time of year.

Ingredients

Scale

Protein

  • 1 lb chicken breasts or thighs, tender cuts

Vegetables

  • 2 medium carrots, peeled and finely chopped
  • 2 celery stalks, finely chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced

Broth and Seasonings

  • 6 cups chicken broth
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste

Pasta

  • 2 cups egg noodles

Instructions

  1. Prepare the Vegetables: Peel and finely chop the carrots, celery, onion, and garlic. Heat olive oil in a large pot over medium heat, then sauté the vegetables gently until they are softened and fragrant, building the flavor base for the soup.
  2. Cook the Chicken: Add the chicken breasts or thighs to the pot with the sautéed vegetables. Pour in the chicken broth, bring to a gentle boil, then reduce to a simmer. Cook the chicken until it is fully cooked through and tender.
  3. Shred the Chicken: Remove the cooked chicken from the broth. Using two forks, shred the meat finely to ensure tender bites that integrate well with the noodles.
  4. Add Noodles and Herbs: Return the shredded chicken to the pot along with the egg noodles, fresh parsley, and thyme. Cook until the noodles are just tender and have absorbed some of the broth’s flavor, about 6–8 minutes.
  5. Season and Serve: Taste the soup and season with salt and black pepper as needed. Stir well, ladle into bowls, and serve warm for maximum comfort.

Notes

  • Use high-quality chicken broth for the richest flavor; homemade if possible.
  • Do not overcook the noodles to prevent mushiness; add them last and cook just to tenderness.
  • Add fresh herbs at the end to preserve their bright flavor and aroma.
  • Simmer gently to keep chicken tender and allow flavors to meld without toughening the meat.
  • Adjust salt and pepper gradually to best balance the soup’s flavor.
