Ingredients

Scale

Main Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 1 cup plant-based cheese, shredded
  • 2 tbsp plant-based butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour (use gluten-free flour if preferred)
  • 1/4 cup vegetarian Worcestershire sauce (natural)
  • 2 tbsp grape juice (natural)
  • 1 1/2 cups plant-based milk, room temperature
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare the Ingredients: Chop the chicken breasts into bite-sized pieces. Cut broccoli into small florets. Mince the garlic finely and shred the plant-based cheese if not pre-shredded. Having all ingredients ready ensures smooth cooking.
  2. Cook the Chicken: Heat plant-based butter in a large skillet over medium heat. Add the chicken and season lightly with salt and black pepper. Cook for 6 to 8 minutes until golden and fully cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic and Broccoli: In the same skillet, add a little more plant-based butter if needed. Add minced garlic and sauté for about 30 seconds until fragrant. Toss in broccoli florets and cook for 3 to 4 minutes, until bright green and tender-crisp.
  4. Make the Alfredo Sauce: Sprinkle the all-purpose flour evenly over the broccoli and garlic. Stir well to coat. Slowly pour in the plant-based milk while whisking constantly to avoid lumps. Add grape juice (natural) and vegetarian Worcestershire sauce (natural). Continue to cook and whisk until the sauce thickens to creamy consistency.
  5. Combine and Serve: Return the cooked chicken to the skillet. Stir in the plant-based cheese until melted and fully incorporated. Adjust seasoning with salt and black pepper as needed. Remove from heat, garnish with fresh parsley if desired, and serve immediately.

Notes

  • Use room temperature plant-based milk to prevent curdling and ensure a smooth sauce.
  • Do not overcook broccoli; keep it crisp to maintain color and nutrients.
  • Whisk constantly when combining flour and milk to avoid lumps in the sauce.
  • Season gradually and taste as you go for perfect flavor balance.
  • Fresh garlic provides better flavor than dried garlic.
