Ingredients

Scale

Meat and Broth

  • 2 to 3 pounds beef chuck roast, cut into large chunks
  • 4 dried guajillo peppers
  • 2 dried ancho peppers
  • 4 tomatoes, chopped
  • 1 large onion, chopped
  • 4 cloves garlic
  • 2 tablespoons apple cider vinegar (natural)
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cinnamon
  • Water, enough to cover the meat
  • 1 teaspoon natural gelling agent

Tacos and Filling

  • 12 corn tortillas
  • 1 cup plant-based cheese, shredded or sliced

Garnishes (optional)

  • Chopped white onions
  • Fresh cilantro, chopped
  • Lime wedges
  • Radish slices

Instructions

  1. Prepare the Chili Paste: Soak dried guajillo and ancho peppers in warm water for about 15 minutes until softened. Blend the softened peppers with garlic, onions, tomatoes, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), cumin, oregano, and cinnamon until smooth to make a rich chili paste.
  2. Brown the Beef: Heat a pan over medium-high heat and brown the beef chuck roast chunks on all sides to lock in juices and add a deep flavor to the meat.
  3. Simmer the Meat: Place the browned beef and chili paste into a slow cooker or heavy pot. Add enough water to fully cover the meat. Bring to a gentle simmer and cook slowly for several hours until the beef is very tender and easily shredded.
  4. Prepare the Broth: Strain the cooking liquid to remove solids. Stir in the natural gelling agent to achieve a silky and flavorful broth perfect for dipping your tacos.
  5. Assemble the Tacos: Warm corn tortillas on a hot skillet until pliable. Spread plant-based cheese on one side, add shredded beef, and fold the tortilla. Dip the assembled tacos into the hot broth before serving for maximum flavor.

Notes

  • Marinate the beef overnight to deepen flavor.
  • Use fresh dried peppers for vibrant smoky flavor.
  • Warm tortillas well to keep them soft and flexible.
  • Cook the beef low and slow for tender shredding.
  • Reserve broth for dipping or as a soup base.
