Description

These Beef Skillet Enchiladas are a quick and hearty dinner combining savory ground beef, soft tortillas, rich natural sauces, and melty plant-based cheese for a comforting Mexican-inspired meal that cooks entirely in one skillet with minimal cleanup.

Ingredients

Scale

Meat and Base

  • 1 lb ground beef
  • 8 medium tortillas

Vegetables and Aromatics

  • 1 medium onion, diced
  • 2 cloves garlic, minced

Sauces and Seasonings (natural)

  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 1 can (14 oz) crushed tomatoes (natural)
  • 1 tbsp apple cider vinegar (natural)

Cheese and Garnishes

  • 1 ½ cups plant-based cheese (shredded)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook the Beef Mixture: Heat a large skillet over medium heat. Add the ground beef, breaking it apart as it cooks until browned. Stir in the diced onion and minced garlic, cooking until the onion is translucent. Mix in vegetarian Worcestershire sauce (natural), chili powder, cumin, salt, and pepper to deeply season the beef.
  2. Prepare the Sauce: Pour crushed tomatoes (natural) and apple cider vinegar (natural) into the skillet with the beef. Stir well and let the sauce simmer gently for about 10 minutes to meld flavors and thicken slightly.
  3. Assemble the Enchiladas: Reduce heat to low. Layer tortillas evenly over the bottom of the skillet. Spoon the beef mixture over the tortillas, then cover with more tortillas. Pour any remaining sauce over the layered tortillas and beef to ensure everything is well coated.
  4. Add Plant-Based Cheese and Simmer: Sprinkle plant-based cheese generously over the top. Cover the skillet with a lid and cook gently for 8-10 minutes until the cheese melts and tortillas soften. Avoid stirring to preserve layers.
  5. Garnish and Serve: Once melted and bubbly, sprinkle chopped fresh cilantro over the top. Serve hot directly from the skillet for a rustic presentation.

Notes

  • Use medium heat to avoid drying out the beef and help meld flavors evenly.
  • Warm tortillas slightly before layering to prevent tearing and ease assembly.
  • If the sauce is too watery, simmer uncovered or add a natural gelling agent to thicken as desired.
  • Do not overcrowd the skillet; allow space for even cooking and better flavor development.
  • Let the skillet rest a few minutes after cooking to help layers set before serving.
