Description

Apple cider is a comforting and naturally sweet drink made from fresh apples, warming spices, and plant-based ingredients. These easy-to-make recipes bring together vibrant flavors and cozy aromas perfect for any occasion. Customize your cider with spices, citrus, or creamy plant-based additions for a delicious and wholesome beverage.

Ingredients

Scale

Fresh Apples

  • 46 sweet and crisp apples (Fuji, Gala, or Honeycrisp), washed, cored, and chopped

Liquid Base

  • 4 cups apple juice or fresh-pressed apple cider
  • 12 tablespoons apple cider vinegar (optional, for tang)

Spices

  • 2 cinnamon sticks
  • 45 whole cloves
  • 1/4 teaspoon ground nutmeg
  • Optional: 2 star anise pods, fresh rosemary or thyme sprigs

Sweeteners

  • 23 tablespoons maple syrup (natural) or date syrup (natural), to taste

Creamy Additions (Optional)

  • 1 cup plant-based milk (almond, oat, or coconut)
  • 1/4 cup plant-based yogurt

Texture Enhancers (Optional)

  • Small amount of natural gelling agent

Flavor Variations (Optional)

  • Fresh orange slices
  • Fresh grated ginger, 1 tablespoon

Instructions

  1. Choose Your Fresh Apples: Select juicy, flavorful apples such as Fuji or Gala. Wash, core, and chop them into chunks to release their maximum flavor during cooking.
  2. Simmer with Spices: In a large pot, combine the chopped apples with cinnamon sticks, cloves, nutmeg, and a splash of apple cider vinegar. Let the mixture simmer gently over low heat to infuse the spices and extract natural sweetness.
  3. Sweeten Naturally: Add maple syrup or another natural sweetener gradually to taste. Stir until fully dissolved, balancing the tartness and spice perfectly.
  4. Blend and Strain: Once the mixture has cooled slightly, blend it until smooth. Strain through a fine mesh sieve to remove solids, resulting in a silky, smooth apple cider ready to drink.
  5. Add Optional Creaminess or Texture: If desired, stir in plant-based milk or yogurt for a creamy finish. For thicker texture and more body, dissolve a small amount of natural gelling agent in the cider.

Notes

  • Use freshly picked apples for the best aroma and sweetness.
  • Simmer slowly over low heat to develop deep flavor without bitterness.
  • Adjust the amount of natural sweetener slowly to achieve your preferred sweetness.
  • Strain thoroughly to ensure a smooth, pulp-free cider.
  • Store leftover cider in airtight containers in the refrigerator up to five days; shake before serving.
  • Freeze cider in freezer-safe containers with room for expansion; thaw in the refrigerator before use.
  • Reheat gently on the stovetop or microwave, adding extra spices or sweetener if desired.
